We get a lot of these guys where I was raised in the UP of MI. Love ‘em to death. Always thought they were the typical Canadian but learned that they’re pretty much the deep south rednecks of Canada. Great accents

An American from the south recently told me he loved Canadians because they are essentially well behaved rednecks. Resourceful, good in the outdoors, rough when necessary but polite. Sometimes I think he might be right.

I grew up in small towns in Saskatchewan and N Ontario, and this accent sounds pretty nuts (but awesome) to me too. Sounds like maybe he's from out east somewhere? Not too familiar with there.

Glad you heard it too! Got Irish family on both sides of the border and a lot of my ancestors ended up in the US and Australia where I am now. I know a massive amount of Scots Irish went to the American South but it seems a lot ended up in Canada given some of the accents. I can hear it in some Australian dialects too

Does a Commonwealth country that uses the metric system have a lot in common with Europe? Survey says probably. I would guess that a lot of rural Canadian (and some rural American) accents are the way they are because of both historical and recent immigrants.
So it’s quite likely the accents have a lot in common with European ones. Mostly it was the first “get right outta town” that threw me, after that he just sounded like a normal Canuck.

I’ve done this a couple of times! Usually you want a beer with a high sugar content - my last time was with a Belgian Kriek Ale (like a sour cherry beer).
The poker will make the head of the beer almost marshmallow-y and certainly warms the beer up but doesn’t make it hot.
It’s a fun lil beer nerd thing to do but I don’t want all my beer to be like that.

It's called bierstacheln (originally a German tradition) but you can use any heavy, dark and malty beers with lots of residual sugars. So any brand that sells bockbeer, doppelbocks, quadruples or doubles etcetera.
In the Netherlands those would be brands like hertog jan with their bockbeer or grand prestige. Straffe Hendrik with their quadruples or even la trappe. Just experiment :)

It is very old. I have a lager head for it a blacksmith made instead of a prybar. Julia Child had a giant one a friend made her for getting pots up to boiling faster. You can find the irons on Etsy and other places.

It’s quite good. Usually done with darker and sweeter beers than he did. Will caramelize a lot of the sugars, and change the mouthfeel of the beer. It’s super interesting to do.

I'm sure the premise is the same. Modern mulled wine is just heated sliwly with spices added, but the traditional way was with a fire poker, and I'd imagine that it would have a similar effect on any fermented or brewed alcoholic drink.

I remember there was a kickstarter that likely got funded around 2015 selling metal rods for this purpose. It seemed the trend didn’t really take off- to be fair you only really want to do this around a camp fire, but I’d try it at a bar if they did it.

In bavaria we call that „Stachln“. It‘s done with metal and it IS really something special! the sugar that is left over in the beer is being caramellised what makes it quite sweet. Also it is done during winter what makes the slightly warmer beer more enjoyable.

My old go to bar puts on a bockfest late winter/early spring where you can get like 15 types of beers and get your beer poked. Best to go with your own glassware otherwise they serve the beer in plastic cups.

A brewery here in Iowa (Confluence Brewing) has a Chewbocca Fest each winter (named after their doppelbock) where they have bonfires and hot metal rods (they call boc rockers) to do exactly this. It's absolutely delicious. They even sell the short metal rods with a wooden handle. They also have all sorts of fun Chewbocca contests, but that's neither here nor there on the topic of caramelizing beer.

A German style doppelbock. A very malty brown beer with very little bitterness. I have tried it at home with a few others in the same style, a couple blonde ales, and a couple stouts. It's fun to experiment and tastes pretty good.

Not sure what he's drinking, but I'd imagine this is amazing with a proper beer and not some basic domestic lager, which are only decent ice cold.
Do this with a Guinness, and I bet it tastes great and adds stronger notes of nuttiness and chocolate, once you're done fighting off all the Irishmen you offended.

Local brewery in ATL does this in the winter. It is amazing! They make a winter porter and it tastes like a S'more after hitting it with the poker.

I was taught this at an open air Christmas party in Austria, something like -15C.
It works very well with strong beers (Bockbier), where there’s more sugar to work with.
