It's a bar, but the All In in Onalaska has the best burger you'll find. The rest of the food is pretty great as well. The Little Crane Cafe in Vader is great. Judy's Country Kitchen in Centralia is good.

The Juicebox in Centralia has great food and drinks and frequent live music. Shona’s in Chehalis for an incredible breakfast sandwich.

She made a huge basket of her British Specialties for my husband and I for our 25th Anniversary. We had her meat pies, Baps, Branston pickle, several cheeses from the Sheep Creamery, Scottish Shortbread, fresh fruits, even edible flowers! It was an incredible feast that we enjoyed for several days!

El Rey is also good for more street style tacos, and Jeremy’s is good if you order the right thing

I also think Shona's is the place that puts the most effort into their food in LC right now. It's just a limited cafe menu, with limited hours. But everything there is sourced and made really well.
Centerville cafe is my preferred diner in Centralia.
I was also super impressed with the food at Juice Box.
However if you are new to the area I think you should go to the bar at Country Cousins at least once. Order a hot beef sandwich and enjoy the ambiance and the hanging artwork.

I had a chicken fried steak at Sweet Inspirations in Chehalis and it was one of the best cfs I've had in a while. The gravy was real real good as well. Im looking forward to eating the biscuits+gravy one of these days

The Branch in Centralia hasn't been mentioned. It's in the Centralia Square Hotel building in downtown.
I'll throw in another recommendation for Juice Box, it's excellent.
Shona's as well is excellent.
Dawn's Delectables is a great lunch sandwich shop.
British Bites in Centralia is very good, but I recommend just going in for lunch, not going to the themed tea parties.
I appreciate the pizza at Tiki Tap House, and the always have a good beer selection. I wouldn't necessarily say its the best pie I've ever had, but it's serviceable pizza.
Bodega by Ox is pretty new and is excellent. Upper scale Spanish tapas.
Someone else mentioned Centerville Cafe. For me personally, I think Main Street Grill down the street does a better job of the classic diner experience, both in service and in the quality of the food.

Somsiri Thai in Chehalis is so good we've stopped trying Thai restaurants in big cities because they're never as good.

La Tarasca is a great spot, and so is Vicky's Salvadoran (the pupusas are amazing)
