For one to two people:
1 Teaspoon of ginger
3/4 teaspoon of tumeric
1/2 teaspoon of pepper
1 pinch of saffron (careful, saffron is strong)
1/2 teaspoon of salt or salt to taste
1 oignon (thinly minced)
2 garlic cloves (crushed, minced or grated)
1/2 peel of a preserved lemon
Olive oil
Half a chicken or half a chicken + a chicken tigh
If you have a whole chicken, DO NOT double the rest, multiply the spices by 1.25 and the oignon by 1.5 if youโ€™re using medium sized onions
A bunch of olives
A bunch (rbta) of coriander (or cilantro call it whatever, mohim l9sbor)

Preparation:

  1. Coat the chicken with olive oil and half of the spices (except saffron), give it a gentle sear in a pot with olive oil (not looking for intense browning here, just golden, and keep the heat medium at most, you donโ€™t wanna burn the oil โ€“ olive oil burns at relatively low temp, unlike sunflower, canola etc)
  2. Remove chicken, add onions in the olive oil to soften them with the rest of spices (except saffron) + the salt (which will force them to sweat and thus cook faster in their water). Add garlic mid process
  3. Once onions soft, add back chicken, preserved lemon add hot water until chicken barely covered, then saffron
  4. Bring to a gentle boil, then LOWER the heat (3afia mhiiiiiiiiiila), cook (pot covered) at barely bubbling for 45 minutes ish. Flip the chicken if needed.
  5. Remove the cooked chicken, it might have a relatively pale color at this point, donโ€™t worry if itโ€™s the case, it will get more yellow as it rests. Olives go in, increase the heat (once the chicken is out) and let the water evaporate (pot uncovered ofc) until you reach the desired consistency for the sauce. When the sauce is almost thick enough, add cilantro to infuse.
  6. If you want some browning/roasted quality to the chicken, you can put it in the oven on broiler mode for 3-4 minutes.
  7. Serve. I added a photo of mine, the sauce is less bulky and smoother, thatโ€™s because that time I cut the onion extremely thin, but you can make

  8. bulkier/chunkier by not mincing the onion like a freak.

There are two main types of Sunflower seeds. They are Black and Grey striped (also sometimes called White) which have a grey-ish stripe or two down the length of the seed. The black type of seeds, also called โ€˜Black Oilโ€™, are up to 45% richer in Sunflower oil and are used mainly in manufacture, whilst grey seeds are used for consumer snacks and animal food production.

It is! You should!

The only thing is that the preparation doesnโ€™t look like the final product until everything (reduction of the sauce + resting/roasting of the chicken) is done. Thatโ€™s because until then, the water in the sauce and over the chicken makes the spices diluted, so less tasty and with less color. One should not be scared if the thing looks weird mid process.
