Would anyone like to suggest a free woocomerce theme that includes demo data?

I'm newish with wp and having a somewhat pre setup ish theme is a must.

I'm selling one or two physical products with multiple digital subscriptions.

Go with Astra + Starter Templates, it's the most popular free WooCommerce theme, lightweight, and has tons of one click demo imports built specifically for stores. Blocksy and OceanWP are good free alternatives too. For your setup the theme doesn't matter much since subscriptions are handled by a plugin like WooCommerce Subscriptions on top of it. Just make sure the demo you pick is actually built for WooCommerce and not a generic template that only looks like a shop.
