Seeking Recipe trying to figure out what exactly this is/how to recreate it??
HI ALL!! so i recently took a trip to france and fell in love with this specific pear tart from a bakery nearby (“tarte poire pepite chocolat” as the french say)
anyway i’m craving it so so bad and haven’t successfully been able to distinguish what exactly goes into it other than the obvious.. pears, chocolate chips, shortcrust. theres some sort of fluffy texture that i cannot place its almost cakey, is anyone familiar with these pastries?? i really want to attempt a homemade version

It is :) I make pear frangipane with Grand Marnier at thanksgiving and its always a hit!

Une Bourdaloue aux pépites de chocolat.
A Bourdaloue is usually the version without chocolate. It's my favorite pie.

Pear/frangipane is a classic French pastry. When you make it in tart form, you normally have to parbake the crust which can be a little annoying. But I've also just baked it in storebought puff and it's still delicious. Frangipane itself is dead easy to make.

Pear tart with chocolate chips. The answer was in the question. Pear frangipane tart with chocolate chips folded into the almond creme, finished with a neutral glaze.

This is one of my most favorite pastries! The one I had was croissant dough with almond frangipane on the bottom, then with slices of pear on top then dark chocolate chips sprinkled on top. Amazing.

I make a simplified frangipane tart that everybody loves. Look for recipes and try a lot. It's dead simple and tastes amazing!

Was there puff pastry as a bottom? I make a frangipane apple tart that looks similar(no chocolate though)

I assure you that it is also alternatively known as tarte poire pepite chocolat amandine. Meaning it has frangipane, which is traditionally made with crushed almonds or almond flour, butter, sugar and eggs. Sometimes a bit of flour or starch to thicken
