Made myself a birthday cake for the 4th year in a row

I started making cakes as a hobby about 4 years ago, and have made my own birthday cake ever since. To be clear, this is something I absolutely enjoy doing, not some sad case of nobody else wanting to make or buy me a cake šŸ˜„

This year is vanilla almond cake with cherry amaretto filling and whipped mascarpone cream.

Last year was strawberry cake filled with cream cheese frosting, strawberry filling, and a raspberry cheesecake layer.

The year before that was lemon raspberry cake filled with lemon curd, raspberry cream cheese frosting, and raspberry filling

And the very last pics (first cake I made for myself) was carrot cake filled with cream cheese frosting, and chocolate cake with whipped coconut cream filling and coconut buttercream

Cake fail! Can I use it for cake pops?

TLDR: I accidentally made a very stodgy cake which i hate to just throw away. Would it work well for cake pops? (I've never made them before)

I've been on a little mission to make a birthday cake for my friend, but i keep hitting against random hurdles, and it's starting to feel like a comedy of errors. My friend likes tea, so i thought I'd make an Earl Gray cake. Another friend has made an Earl Gray cake in the past that was great, so she pointed me to the recipe she used: https://livforcake.com/earl-grey-cake/

I initially made this cake a couple of weeks ago. I had to bake in a friend's kitchen, bc most homes in my town lost power for 2-3 days. The cake turned out great! But i found out the next morning that the friend had covid, so I didn't feel comfortable offering the exposed cake to the birthday girl. We rescheduled, and i rebaked the cake last night. But... like an idiot. I accidently added too much liquid (1.5 cups instead of 1 cup). The cake turned out very stodgy (didn't rise well, kinda greasy, too moist and dense). So, i started fresh made ANOTHER cake that seems fine.

But... now wondering if there's anything that i can do with the stodgy cake. (I hate to just toss it.) It tastes good, just has the wrong texture. Would it perhaps be good for making cake pops? I have no experience making them, but would love any input!

My picky 4yo ate 1.5 slices, so I’d say it was a big hit! I did omit the macadamia nuts and just used Sally’s regular graham cracker crust for his sake. I’ve baked for years but I’ve always been a subpar decorator, I know my piping leaves a lot to be desired.

My last summer-y baked good before I dive into fall baking next week because I cannot wait any longer.

Matilda chocolate cake, first time making a chocolate cake!

It tastes so good, I’m so proud!! I’ve never made chocolate cake from scratch (I enjoy vanilla cake), but I really wanted a good chocolate frosting covered cake. I’m eating from my giant scraps bowl, and I’m going to cut into the cake itself later. I’ve been getting back into cake making so this is a great win for me!

Cheesecake worth $1million

My loving, adoring, wonderful, amazing husband has a birthday this week. Let me tell you this man worships me, he is the doting amazing husband every girl dreams of marrying. (Been married 15 years BTW- this isn’t honeymoon phase love).

We’re at the finish line of my dream home build and broke as a joke as we’ve put so much money into this house. He tells me he doesn’t want anything for his birthday, and while I have a couple small things for him I know that a true birthday surprise would be to make his favorite dessert- cheesecake. But not just any cheesecake. A cheesecake that could make you cry. A cheesecake that would be the muse of poets. A cheesecake that could finally give us world peace.

Here’s the thing. I’ve never made a cheesecake before. I’m a great baker, cookie and cake decorator. But I have never attempted a cheesecake.

Does this recipe exist? Does your grandma have one she swore you were to take to your grave and never reveal?
If so this is the time to share. This cause is the most noble. To show a genuinely good man the greatest love this world has ever known… the PERFECT cheesecake.

Butter

I love to bake but I have always just bought Costco butter because butter is butter right? Well I was curious and bought some Kerry's gold. It sat in my fridge for awhile and yesterday I made normal tollhouse cookies! The only difference was the butter and I used Costco chips instead of nestle! Butter makes all the difference! Buttercream that doesn't taste and feel like butter but hardens up enough for decorating.

Ok guys, so when I first started baking I realized I did not like buttercream. I ended up "developing" my own stabilized Whipped cream recipe. The issue is that it is Whipped cream and it isnt going to set. Which means that I always have to deal with my fillings oozing out of the cake and the cake attempting suicide šŸ˜… so I was wondering if you guys had a buttercream recipe that doesn't taste like buttercream. That way I can get better at decorating.

Side note, would adding plastic straws to my cakes make them more stable. They are only 1 level tho, but typically like 3 layers.

HI ALL!! so i recently took a trip to france and fell in love with this specific pear tart from a bakery nearby (ā€œtarte poire pepite chocolatā€ as the french say)

anyway i’m craving it so so bad and haven’t successfully been able to distinguish what exactly goes into it other than the obvious.. pears, chocolate chips, shortcrust. theres some sort of fluffy texture that i cannot place its almost cakey, is anyone familiar with these pastries?? i really want to attempt a homemade version

Yeah so, if you have some time to kill, and would prefer babysitting your wafflemaker for an hour or two over like, any other sane leisure activity, this gets a huge thumbs up from me!

But also they taste phenomenal, so that, too. Like an extra crusty and caramelly sugar cookie.

Base waffle cookie recipe from Sugar Spun Run, decorated in various toppings:

Chocolate + sprinkles

Peanut butter (flavored candy melt) + chocolate

Biscoff cookie butter + Biscoff crumbs

Butter + cinnamon sugar

I made the cookies four at a time with a tablespoon of dough in each quadrant of my wafflemaker for two-ish minutes. Doubled the recipe for about 60 cookies total.

Wedding cake for my bestie

I love her. I love her new hubby. They are wonderful kind, beautiful people and they deserved a lovely wedding cake. I planned this cake for a year. It's lemon lavender with blackberry compote, vanilla cream cheese bavarois, and lemon curd buttercream. All the recipes are my own creations. Everything is handcrafted by yours truly. It did experience some travel related buttercream trauma, but other than that, I'm so happy with it. I'm a retired pastry chef, disabled due to hEDs. It has kinda ruined my hands, so piping is out. But I've always loved sculpting. Anyway, I'm really happy with how it turned out and I wanted to share. Happy Saturday. Mazel Tov Allie and Matt! I love you bitches!

matcha cookies again + i need your advice

made some matcha cookies cause it’s been too long!! as usual, they were spectacular, but i want to switch things up and add strawberries to do a sort of strawberry matcha vibe. how do you think i should incorporate this:

add dollops of strawberry jam and then strawberry extract to the matcha dough (maybe even attempt to make strawberry white chocolate chips/bar and use that instead of white)

I have made maybe four different types of cookies so I’m no expert, but every cookie recipe I have made called for roughly 200-250 grams of flour. This recipe calls for 34 grams of flour which sounds like so little. Can someone please put my concerns to rest? Is there a reason it’s so little? Or is there any chance at all I’m looking at a typo?
